UGLY-STYLE JALAPEñO CHICKEN
Searching through the interwebs for recipes, it would seem that you can encrust chicken in nearly anything…well almost anything.
Our Jalapeño Kettle Chips are no exception! They’re literally a ready-made coating infused with tangy spices that will kick the traditional breaded chicken sandwich up a notch on the flavor scale. On a bun and topped with your favorite condiments, or enjoyed sans bun with veggies on the side, this is a sure to please recipe when you have limited prep time to wing a meal (no pun intended).
Bonus points if you top these suckers with fresh jalapeños!
WHAT YOU’LL NEED:
- 1 6oz. bag of Uglies Jalapeño Kettle Chips
- 1lb. skinless, boneless chicken breast, sliced thin
- 2 eggs
- Buns and your favorite condiments and toppings (fresh jalapeños anyone?)
LET’S DO THIS!
- Pre-heat oven to 375º.
- Finely crush Uglies Jalapeño Kettle Chips and place in large storage bag.
- In a bowl, beat eggs to make egg wash.
- Dredge chicken breasts in egg wash, then place in the storage bag with chips and shake until fully coated.
- Transfer coated chicken breasts onto parchment paper lined tray or cooking stone.
- Bake for +/- 20 minutes, being sure to flip at the halfway mark. Continue to bake until chicken is cooked thoroughly and coating is crunchy (NOT BURNT!).
- Serve on bun (or sans bun) with favorite condiments and fresh jalapeños (if you dare).
